EZPZ HAWAI-IAN STYLE SAVOURY BREAKFAST PANCAKE

 


How do you like your breakfast ?? For me weekend breakfast has to be really grand. Okay, if not grand atleast some thing special, a bit different than the regular weekly staff. But having said that I make all the effort to keep it healthy for my family and hassle free. This soft and cheesy pancakes are made in a jiffy, they have the softness  and the "goodness" of milk, egg and cheese  with crunchiness of crispy cornflakes on top, and to kick it all of some juicy cherry tomatoes, olives, ham, pineapple and greenchilli toppings....Uhhh!! drooling by now? I know I am :P



Now, these pancakes are incredibly filling so you may serve them as brunch or even a great option as late afternoon snack for your little ones. If making this for the kids ignore the green chillies, you know the drill!

So to make this EZPZ Hawai-ian Style pancake you will need

Ingredients :

For BATTER:

2 cups (100ml) plain flour 
4 eggs - (BFC ingredient 2)
1 cup (100 ml ) grated cheese
11/2 -2 cups milk to make a smooth batter.
Salt and Pepper to season well
Dried parsley, 1 tablespoon.
1 cup shredded ham, extra for topping (extra for topping, 1/4 cup)
Mix every ingredient and make  a smooth batter...

For toppings:

you will need :

3/4 cup Pineapple Chunks (I used the canned variety)
2-3 Green Chillies chopped (not recommended for the lil ones)
Cherry tomatoes halved (10-12)
Black/green Olives sliced (a handful)
10-12 Mushrooms sliced
2-3 tbspoon Cornflakes (slightly crushed) -optional
Freshly grated cheddar cheese (grated)
Dried parsley 2 tbsp.
Freshly ground black pepper and salt to season well.
Some Mayonnaise or sweet chilli sauce to serve.
Oven Proof Skillet (mine was 25 cm, round) or a Pie dish or baking tray.




METHOD:
Preheat oven to 200 degrees Celsius.
Now take  a oven proof skillet or a pan and pour the batter first. Flame on medium - low

Now once the pancake starts to cook, layer the toppings as you like; such as Pineapple, mushrooms, olives, cherry tomatoes, green chillies, more shredded ham, finish with cornflakes and grated cheese, herbs. season well.






Slide in the oven (200 degrees Celsius) and bake until golden and cheese has melted nicely (about 15 mins) !



Alternatively, if you do not have an oven proof skillet, slide the semi cooked pancake on a grease proof lined (with baking paper) baking tray and layer with toppings as above and slide in the oven. Bake until the cheese has melted and looks golden on the surface.. Job done!!

Serve warm with some Sweet Chilli Sauce or Mayonnaise.
